Never have been a box type dry cake person, probably because Polish cakes are heavy yeast roll cakes filled with poppy seeds or prune butter which I’m positive were designed in Heaven! And Polish jelly filled donuts have no match, they are sooooo delectably delicious, well ok… Wally’s Pastry Shop on North Oak in Kansas City North comes close! So I NEVER bake cakes. Never even had a piece of cake until I was married and discovered Ozark people have a thing for chocolate cake. Not even mom in law’s black oil cake piques my interest. But I love PIE. My stepdad would take me on Sat. mornings to run errands while mom cleaned house, and after all was done, we would end up at the corner drugstore and I would have a huge piece of cherry pie and a coke and he would tell me about the wonders of the world.
I am famous for lemon meringue, cherry rhubarb a specialty…a dump cake, yes, I said cake, WITH a fruit filling, pumpkin pie at my best. Just really crazy about coconut cream, chocolate cream ok, banana cream in the trash. yuk!
So now with 2 people, one being diabetic, someone…no name mentioned, plump, it’s hard to bake for this combination as I either have to freeze or give away. Now I’m looking for a recipe where I can bake simultaneously a pie with each slice being different so we can enjoy all but not at once. It gets wasted. It’s best I only bake when company’s coming! And I use either the 6 cut or 7 cut metal pie marker.
My children are like pies, each one so different, it’s hard to believe the 4 came out of the same nest. One thing in common, THEY ARE A JOY. And the older they get and the more mature…the more amazing. It’s a tuff family/families we all come from, full of anger and tears, but I have to tell you, by the Grace of God, LOVE is overcoming and out of the smoke and clouds, I see 4 strong mature adults who are getting a handle on the nature of people, of life, who have learned to think on their own, and who are excelling with concerns over their adult children and grandchildren and trying to show BY EXAMPLE that life is worth the living!
Life did not turn out as I planned. Lots of scars to contend with, but I became who I am today because of where I walked and along the way I met God. My four have battle scars unbelievable, but they also come from good blood, who hung on the cross for us. My daughter always sez…”what doesn’t kill us, makes us stronger.” My eldest son sez “I just keep loving them, Mom…” My middle son sez…”I’m raw…that’s how I touch people..” My baby son (white hair, balding…but still his youthful figure) “It’s all good, by the Grace of God!” Each a different slice of pie, each one matured to exactly to where I hoped they would end up as adults. Thank you Lord for these wonderful people in my life YOU gave me.
