Dealing with these new changes with 4 plans to choose from concerning our electrical billing seem overwhelming. It’s all about “peak hours”…they say. We still have to deal with the situation at hand, so we are going to the office and sit down and figure out what is best for us. The horror stories are emerging as others are trying to figure out how this will work. But one thing I know, the human mind will figure out how to effectively do things differently to cope with rising costs. OK… those looking for answers will find ways.
I was horrified to read the other day, a posting on what we the people, donate foodwise for those in town in need of groceries. The 1st such complain being mac & cheese, as how can you fix that if you have no milk? Good grief! I raised 4 kids during difficult times in my life. That favorite food could be stretched, altered, added to…sometimes I didn’t have all the milk that was needed so I rounded out with water. Sometimes I added more noodles out of a bag and stretched the meal for bigger servings, maybe a touch of boullion in water, sometimes fried up the cooked noodles, buttered the top and sprinkled the cheese mixture on top. There is no end to what you can do when you are lacking an item, you have to substitute!
So I will adjust to high costs betwixt 4 and 8 pm. The challenge being I’m a scratch cook, a Polish one at that, so I’m not a gravy person, but lean more to sauces.. 1+ hrs daily to fix supper, cooking from 5 to almost 7 pm. Yikes….geez…life must change around here. I already have actually started cooking 1st thing in the morning and freezing portions. I can make sure I do laundry and dishwashing at low cost times but cooking will have to change.
That is a skillet with 2 huge onions, fresh garlic and chopped mushrooms in half a lb of butter…sauteing till carmelized. A very basic starter dish for so many recipes. Then I sauteed shredded carrots which I only added to 2 dishes cuz I promised hub-side kick NO CARROTS in HIS spaghetti or chili (stubborn Irishman!). Divied it all up amongst 5 containers and they are in the freezer baby!!! Another thing I’m doing is cooking up full bags of noodles and divided up into 4 freezer ziplocks Freezing is my answer and PLANNING is where it’s at. It is what it is and we ALL have to adapt. I understand the electric company is encouraging air frying and I’m really good at that. My heart is concerned for all who work and come home and have only so much energy to cook and do laundry and dishes right after work. They will have to get super creative.
I imagine nights will become louder as dishwashers and washing machines are programmed to start after midnight. It’s a matter of thinking how we can change and be faithful to the plan.
Lord, God! ! ! Help! Give us ideas…in the Name of Jesus!
