#137…Living with Hub Side Kick/Self Portrait…

Yes, this oil painting is hanging above the kitchen cabinets. You think I’m weird? This is a self-portrait of hub side-kick, yes, with a donut. A stubborn Irishman, a DIABETIC stubborn rebellious donut totin’ ………..No, I’m not the wife, rather I am the kitchen and restaurant gestapo. My purpose in life is to carry a Louisville Slugger in one hand and a permanently attached Dyson Pet stick vacuum in the other. Such is my life with this man who has turned over all control to his dietary meals to me, his beloved……..

Be not fooled……if I tell him, NO….he won’t touch that food. He’s good about that. But he can come up with more reasons to take me out to eat and ALL for MY benefit. Of course I was so tired on election day, a 30 hour day for us so a Mexican restaurant celebration at the end of the day…..a luncheon yesterday with my club and then he thought I was still exhausted from Super Tuesday so let’s have Kentucky Fried Chicken and sit there and “talk” (this from those Irish slick lips…) (#3daughterinlawlessnessmelinda must take after “Pop”). And then this morning a long waiting visit at the doctor’s and it was lunch time! The Happy Happy Irishman was doing the River Dance just thinking about it, so off to Freddie’s we go. Today is Thursday. Did I mention that he dined out for breakfast with The Liar’s Club Monday…at Hardees? Yes, tomorrow it’s La Peeps breakfast and grocery shopping.

I have so much fun keeping up with him and I am aware of what he’s up to….I have 3 sons, what’s to guess for me? But I’m always telling people that our lifestyle is figuring out 42 ways to cook radishes. Diabetes comes with a vengeance to destroy. I seek knowledge continuously to improve our health and our eating. For us we NEVER bring dessert into our home. Not a problem, we’ve gotten used to that. Consider that we should not eat ANYTHING white. It’s the carbs that are so hard! Flour, white bread, rice, white potatoes…..PASTA!

But we have learned to broast and carmelize raw veggies, we do cut the fat off meat and AIRFRY it….we NEVER fry anything…steaming is really good…learning to use spices, we trudge on.

And today the victory showed up in our lab results. Both of us with lower cholesterol, lower tryglycerides, sugar levels. Thank you Jesus. Life is worth the living! Prayers for all Americans during this corona virus crisis!
